Ingredients:

  • 1 large beet * (about 1 cup)
  • 1 15oz can white beans, rinsed and drained (or 1.5 cups cooked from dried)
  • 1 clove garlic, (optional)
  • 1/2 lemon’s juice
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp sea salt
  • cut veggies for serving, (carrots, celery, radishes, broccoli, fennel, etc.)
  • grilled flatbreads or pita, (optional)
