Basic Cooked Chickpeas

Ingredients:

  • 1 1/2 cups dried chickpeas
  • water, for soaking and cooking
  • 1/4 – 1/2 tsp sea salt (optional)

Directions:

Sort through dried chickpeas and remove broken pieces and debris. Cover the peas with warm water and soak for at least two hours or, preferably, overnight.

When ready to cook, drain and rinse chickpeas. Pour into large pot and cover with fresh water by about two inches. Turn burner on high and cover to bring to a boil. Once boiling, uncover and skim any foam from the surface. Turn heat down to low-med, re-cover, and simmer.

Simmer, stirring, skimming, and tasting occasionally, for about 1.5 hours. I tend to check on the beans every 10-15 minutes after an hour. Add sea salt, if using, only within the last half hour of cooking.
